There are several factors which create a low acidic coffee

i.e.
1) Roast Profile - Light to medium roast profiles tend to produce a low acidity in coffee
2) Coffee Beans - Coffee Beans from Brazil and Sumatra roasted light to medium tend to produce low acidity in coffee
