   We have many visitors to our coffee roasting shop in Key West, Florida and one of the first questions vistores ask us, many times, is why can they not smell the coffee down the street. They tell us where they are from, in most cases, there is a coffee roaster down the street where you can see the smoke and smell the smoke during the roasting process. They tell us they can tell when they are roasting miles away.

    Our answer to our visitors is Island Joes Coffee Roasting Company has gone green, as living in Key West one becomes very much in touch with Mother Nature, sometimes fearing her during hurricane season and always amazed at the beauty she bestows upon our senses. Thus our small family owned and operated coffee roasting family wanted to do their part which would help Mother Nature have the opportunity to share her grace and beauty for generations to come, so we added an Oxidizer to our coffee roasting system. Perhaps a little expensive for such a small company to bear, but we could not image waking up every day not seeing the beautiful waters surrounding our island and the sunsets, well we would be without words if the air was so polluted one could not view some of the finest natural art on earth and knowing we did not do our part to help protect this wonderful gift.

     Our Oxidizer almost eliminates all the pollution which is associated with roasting coffee, as without the Oxidizer during the roasting process thick black clouds of smoke (pollution) escape into our environment.  Perhaps one or two customers do not find us by smell, but they eventually do, then we explain why, this always seems to put a smile on their face.
